You may be relatively new to rawfood, and I'm more aware now that when I'm putting in myrecipes use three cups of sprouted buckwheat you mightnot even know what it is. And I quite often get asked doI measure it before it's
sprouted or afterit's sprouted? So I really want to showyou how to do this. It's very, very simple. And it's maybe a little bitdifferent from sprouting other things, maybe sunflower seedsand that kind of thing that you grow into greens. It's actually a lot easierand simpler. So the first thing you wantto do is get a really good
quality seed. So these are buckwheat groats. Don't be fooled by the name. They're not actually wheat. They're So if you don'teat wheat, you can still eat these. They're actually a seed ratherthan being wheat. So you really want to make surethat you get them still
in there in they'relittle pyramid shapes and not roasted. If they're roasted, they'rea lot darker. They're a brown colour. So if you get goodquality seed which you can usually get fromhealth food stores, or actually even some supermarketsnow are stocking some good seed intheir dry form.
Now, I've measuredout a cup there. So if you see in a recipe thatyou need two cups of sprouted buckwheat, you can actuallystart off with one cup because usually, by the time they'vegrown their little tails and I'll show you what that lookslike in a second once that's done, they willusually double or even triple in size depending on howlong you leave them. So take your buckwheat, and wecan add some water to that.
And it doesn't actually matterhow much water particularly, just enough to cover them. And then I just have a quickstir around to get them all underneath the water there. And we're just going to soakthose for 15 minutes. So in a lot of recipes you mayhave seen soak nuts almonds, cashews or whatever overnight.

Reluctant cooks, don't worry this recipe isSO easy. Coconut milk,mango and ginger are alreadya flavor trifecta. Then to add a sweet spicy aromatic note,I use the most neglected member of my spice
collection,cardamom.Blend until smooth. I use white chia because it looks prettierthan the black seeds. The chia seeds will plump up and the texturewill be similar to tapioca. Refrigerate for 4 hours so the magic can happen. For the awesome sauce,add coconut milk andcoconut sugar to a large saucepan.Reduce over medhigh heat for 15 minutes.Mixture will start to thicken. For an extra rich sauce, add a dollop of veganbutter, and finish with a pinch of sea salt. And tada, we just made coconut mango chiapudding.
